The Kai Shun Japanese Santoku Knife has a 16cm blade with a 12.2cm handle, and is ideal for quick chopping and slicing of meats, fruits and vegetables.

This knife is made up of 32 layers of damask stainless steel which gives the unique and beautiful Damascus effect and has an inner layer of V-gold-10 steel. The steel is made up of 1.0% carbon, 1.5% cobalt and 61 ± 1 HRC, and so is exceptionally hard and highly resistant to corrosion.
